Winemaking
Our production ranges from 400-700 cases per year. Cabernet sauvignon blended with merlot and cabernet franc is our primary wine. Occasionally we produce a Mt.Veeder Merlot called Lolita and rarely a Cabernet Franc. The cabernet has a minimum of 2 years in French oak, while merlot has 18 months in a combination of American and French oak barrels. Our wines are rich, concentrated and intense, with dark ripe cherries, blackberries, violets and currants supported by lush, soft tannins.
Our Use Permit allows us to produce up to 5000 cases and an option to build a 6000 square foot cave. The cave site has been selected and plans for a second winery building are in the sketching stage.
