Farming: Dry-farmed vines; 100% sustainable agricultural practices; All inputs within OMRI Guidelines.
Harvest Dates:  Late September , 2018
Fermentation: Small, open fermenters; punch down 2 per day
Yeast: Cab and Franc-Cepage Cabernet; 14-day average fermentation; Press off to barrel; Inoculate for malo-lactic fermentation (viniflora oenos/ Hansen CH16).
Barrels: New Nadalie Borderux Traditional barrels
Barrel Time: 24 Months
Blend: 80% Estate Cabernet Franc; 10% Estate Cabernet Sauvignon; 10% Merlot
Alcohol: 15.5% by Vol.

Tasting Notes: Beautiful deep purple-red in color, this wine has amazing aromas of dark sweet fruit, mostly cherries and mulberries plus floral notes of violets and rose petals. The flavors linger and change on the palate, apple and blackberry flavors accompanied by candied citrus, cinnamon and cloves and a lovely bramble of mountain herb, licorice and vanilla. Finishing with well-structured tannins and balanced acidity, this wine will only continue to develop and evolve in the bottle.

Fermentation: Small, open fermenters; Punch down twice per day;  Yeast: Cepage Cabernet; 18-day average fermentation; Press off to barrel; Inoculate for malo-lactic fermentation (viniflora oenos/Hansen CH16)

Blend: 5% Estate Cabernet Sauvignon, 95% Estate Cabernet Franc

Tasting Notes: This wine is a beautiful ruby-black in color. The first sniff is like a dive into the proverbial Emerald Forest, the essence of Cabernet Franc’s incredible flavors. A light touch of fresh mint enveloped by violets and lots of dark berries and plums laced with vanilla, sweet spices and licorice and a haze of that Mt Veeder dust or bramble. Delicate dancing flavors are balanced nicely with a great acid backbone and structured tannins. This wine is delicious now and I feel it will even improve with more bottle age!
